Pineapple Upside Down Cake

I think when it comes to summer fruit desserts are the best. When the air is warm, all you want to eat is something refreshing. Pineapple is one of the refreshing food that best eaten in the summer because it contains so much water in the fruit.

You can find pineapple everywhere, if you can’t get fresh pineapple, you can get the canned ones. And it’s not a strange fruit anymore. You can do pretty much anything with it. Eat it raw, canned, juice, jam, etc.

I grew up in Indonesia, you can pretty much plant pineapple anywhere you want. Just cut the head and plant it. You’ll have your own pineapple in 30 months ๐Ÿ˜› I know it’s long time, but for some reasons I’m always obsessed with DYI things, including plating vegetables and fruits. I don’t like to take care of flowers that only look pretty. I prefer to plant something that will give me something. Habit ๐Ÿ˜›

Ingredients:

  • 1/2 cup caramel
  • 1 ripe pineapple, cored, sliced
  • 1 cup caster sugar
  • 1/2 cup butter
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup sour cream
  • 1 tbsp vanilla extract

How to:

  1. Pour the hot caramel to your baking pan. And place the pineapples on top of the caramel. Set aside.
  2. Preheat your oven to 170 C.
  3. Sift flour, baking soda and baking powder together. Set aside.
  4. Beat butter and sugar until fluffy and pale.
  5. Add 1 egg at a time until incorporated.
  6. Add sour cream and mix well.
  7. Add vanilla extract. Mix.
  8. Add the flour mixture and mix well.
  9. Pour the batter to the pan. You should do it gently, so the pineapples won’t be messy.
  10. Bake it in the oven for 30 to 40 minutes or until the top has nice golden brown colour.
  11. After your cake is baked, let it rest for half an hour before you take it out from the mould.

note: I personally like this cake a lot. I like the sweet and sour from pineapple and not-so-sweet cake. Another recipe from Raiza. And sorry for the short post, I am soooo very tired today.

  4. That looks delicious! Do you make your own caramel? Or can you recommend a good one to purchase. I love using seasonal ingredients and while pineapple isn’t grown where I live, I do enjoy it during the summer months. Happy baking!

    • Yes, I made my own caramel. Very easy, 2/3 cup of brown sugar and 2 tbsp unsalted butter.
      They don’t grow pineapple around here either. I currently live in Sweden, but almost all supermarkets selling this gorgeous fruit.

    • Yup, you can google or try to find a video on how growing a pineapple.
      Because that’s what I always did when my mum bought pienapple, it’ll take a while until you can harvest it though ๐Ÿ˜€

  7. Certainly a special treat. We used to eat pineapple upside down cake when I was a child. I remember that episode from the cartoon “The Jettsons” with the pineapple upside down cake.

    • We have to ignore how many calories in 1 slice to enjoy this treat though ๐Ÿ˜›
      Unfortunately my mum didn’t bake as much, so I just heard about this great cake recently.

  14. I remember going to a ”show” dinner and the cook actually used tinned pineapple juice instead of oil because he said it was cheaper or healthier; I don’t really remember which one ๐Ÿ˜›

  19. Pineapple upside down cake is one of my all time faves. Can I skip the caramel? I like fruity but not too sweet. Great recipe!

    • You can of course, but might get different result. I don’l like sweet my self but I like this one, because its not very sweet. Just enough. So you might want to try this recipe with caramel first and see what you think about it ๐Ÿ™‚

  23. Thanks for trip back to my childhood! My Mom used to make pineapple upside-down cake frequently when we were kids. She used cherries instead of strawberries and did add the juice from the sliced pineapples into the mix. Thanks for the Great Story!
